Basically what our client is looking for is for the form when submitted to log into the server with a username and password, bypassing spam filters etc.

I'm still not sure that I understand?
You could set up the users as registered users in Joomla! and add username and password boxes to the form - but why not just have them log in?
Or you could build a separate identification system - but that feels like unnecessary work.
