I'm sure all of this would be in the documentation, but it's early sunday morning here and I'm still sleepy....

Is there a way for the person who sent the form to receive an emailed THANK YOU confirmation? I know there is a thank you confirmation page, but I need the emailed thank you confirmation too.

This would be in addition to the person who is set to receive the form esults.

Yes it's possible. Needs a little chunk of code posted into the 'OnSubmit after email' box. It's been posted here a couple of times recently so shouldn't be too hard to find after the second cup of coffee.
