Most likely the Plugin isn't enabled on the Form Plugins tab (a green bar is enabled, a red bar is disabled).

if I go back to the plugins .. the " joomla registration" has disappeared.. is that how it's suposed to be ?

No, should still be there.

How can I view other fields that I've added in the New registration form in the back end?

You'll need to set up a table and save them using a DB Connection (check the Tutorial from the Tutorials link above).

I can't think of any reason why creating a table would disable the plugin.
