Email won't send in 3.1RC2

I have installed 3.1RC2 (and in fact tried 3.0) but both seem to have the same issue:
When I create a form in the email setup tab I am unable to set the email properties to Enabled, the drop down selection is greyed out.
How can I enable emails to be sent?

Now sorted, I had missed out the "From Email"
