What actions do you have in the Submit event of the last form page ?
you can see my attachment, it just sending email and redirect to a page.you can try importing it and submitting form, it doesn't store log, (I tested it carefully)

There are no forms attached, but if you have a redirect then Log will not be stored, because the Redirect occurs before the Log is saved, there are 2 solutions:
- you need to set your Redirect to be "Timed", and display a "You will be redirected in x seconds message"
- Use the "Log Data" action before the Redirect
