I am trying v8 and in a v7 form I have {str:ip} that I place in a hidden field to be returned in the email.
I the returned email, it shows nothing. Did you change the IP address variable ?
Or maybe it is not included in the {email:data_table}

The {str:ip} should work in v8:
but it's better to use a Virtual field if your main goal is getting a value in the email fields list
