How can i modify the output?
When i get the Mail from the contact-form the text from the submitted fields are not in the fields, they are beside.
Looks broken for me and customers.
Please fix.
if you are using v7 and use the default email under form settings then this should not be broken, unless you did something to break it, it works fine for everyone.

how can i solve this with no answer? where is the email tempalte field? i created a new form, nothing changed.. still the view from image above...
you should have the field labels on the left side, but they are not there, do you have labels for your fields or are you using placeholders ?

no labels, just placeholders in some forms. because design...
So if you have no labels then the email will not put them for you, you will need to build your own email template if you want it to have the placeholders in place.

so i delete {email_content} and build my own template with table and so on?
yes, and use {data:field_name} to get the value of any field!
