strange enough: When adding a recipients address and clicking "apply", it shows the address. When clicking "save", it changes to the CMS admin address. Within about 10 trials, just one worked. Means: the behaviour is totally unpredictable but in most cases the settings won't accept any address else than the one of the site admin.
I cleared system cache, CF cache, browser cache ... still not working. I mean it is quite essential to insert a recipients address to a form 😉

You mean under Settings > Behaviors > Admin Email ?
If you try to keep this empty then it will force the admin email address, or add a different email and it should save it!

thanks for your reply. But I didn't leave the e-mail field empty. I tried with one and more addresses - always the same: after saving, the field is set back to the admin e-mail. I finally had to give up and use CF6 instead.

An important note is, when you enter a new email address you should press "Enter" after you complete typing the address, otherwise it will not be stored!
I've got a similar problem. When I add <From Data> in the Actions Editor and fill in both <From Email> and <From Name> the From data filled in in <Settings> area of Chronoform 7 still appear in the email when sent and received.
I could not produce this here, enable the debug behavior in the form settings and check the debug after the email is sent, what does it show in the from section ?
When I click on <Debug> after having activated <Debug> in the Form settings and after having sent the form nothing happens.
The debug data should be visible below the form after you enable it in the form settings!

Max, I think I know what the problem is. It seems to be impossible to send a copy of the email to the user sending it, in other words the CC address cannot be the same as the From address. Am I right and if so, why is this action not allowed?

Hi JCK,
GMail and some other mail services will treat any email where the To and From emails are the same as either spam or an error and block it. There is similar behavior if the From address does not match your sending domain name.
The fix is to make the From address match your domain e.g. info@mydomain.com - it may need to be the same as the address in your site email settings.
