My website returned an error message of "you did not pass the honeypot test" when a client tried to upload a document. I have checked that the "name" in the design section matches the "field name" in the setup section, "email_address_20_2723" in both sections. The form works for me, but evidently not forthem.

Because it's called email address blah blah the browser is probably trying to autofill it.
Isn't it supposed to have a tempting name like email address to tease web bots? What do you suggest I change?

That's correct, if the Honeypot input is not empty it is assumed to be a spammer.

So. It gave a user an error message. A human user, received the "You didn't pass the honeypot test." error message. Why did that happen? How do I fix that?
Just don't use the honeypot. Chrome aggressively auto fills fields and refuses to honour autocomplete settings anymore
