I have worked through all of the forum topics regarding adding a "loading" gif and I can't seem to get this thing to work. Is there a clear and detailed tutorial on this somewhere? The tutorial here is rather vague. Screenshots would be a huge help! Thanks in advance!

Which bit do you think is vague? Not sure that screenshots help much here. You do need to be editing your form in Normal/Advanced mode, not in easy mode.

I'm editing in normal/advanced mode. I ask about screen shots so we can see where in the stack things are supposed to go. For example, where should I put this element - "Add a Custom Element element to your form, open the configuration and check the 'Pure Code' box, then add code like this to it:" It just says "form" but doesn't specify where in the stack it goes. Does it go under OnLoad or OnSubmit or OnSuccess?

Just a hint here, your form does not look complicated, so if you have the latest Joomla then you can install Chronoforms6 (and keep v4 as its) and have the loading effect (default behavior)

Sounds good Max! Currently running Joomla 2.5 on the form site. I will begin the mini-migration to 3.x.
