I have just migrated a form to Chronoforms 5 and the emails that are sent are not formatted properly and the html tags are visible. Didn't have this problem when sending form HTML form info is Chronoforms 4. Not sure what's up. Any help? The "Email" event in setting is set to HTML, and the email template is set to Auto.

No idea, I've not seen that before, It looks like a default template layout so I suggest that you delete it then re-save the form to create a new template and see if that resolves the problem.

I sent it to Gmail as well, no difference.
When I receive a message sent from Chronoforms 4, the message is correctly being sent as HTML. In CF5, the message type received is always plain text, regardless of the setting in the form.
One workaround would be to just send plaintext emails from Chronoforms 5, but that is not ideal. If I do go that route, how do I get a line break that works in the email template for plain text? Right now plain text jams all the lines next to each other in the message I receive.

Please check the mailer configuration with your web-host. This is not being caused by ChronoForms as far as I can tell.

Regardless of the mailer configuration, why would CF4 work properly, but not CF5? Wouldn't both versions be using the same mailer config anyway? Unless there is a specific setting the mailer config needed to make CF5 work properly.

There are some quite big differences in the mailer code between CFv4 and CFv5 as CFv5 was written to work independently of Joomla! if necessary. Despite that, unless you specify mailer setting in the Forms Manager settings tab CFv5 uses the Joomla! mailer settings.
I have seen no other reports of this kind of problem as far as I recall so it is most likely related to your mailer service set-up.
