In the ReplyTo email field, I typed {email}. In the ReplyTo name filed I typed {name} as these correspond to the field names. When I try to reply to an email, I get the following:
{name} <{email}@server28.01domain.net>
If I take out the brackets, then I get:
{name} <email@server28.01domain.net>
These fields work as I am using them in the special fields section. When it comes to using the special fields for "From email field" and "From name field" those allocations work perfectly. They just don't work in the "ReplyTo" fields.

You can only use the {fieldname} format in the Special Fields tab, in the General tab you must use email addresses like [email]user@example.com[/email].
There is not Special Fields tab box for Reply To so you can't use a field name here.
The reason for this is that the Reply To field is often used for validating that mail is not spam and if you do not have a recongnised address for your domain in there it is very likely that your email wil not be sent correctly.

It would be nice if the ReplyTo feature could be changed one day. The reason is that it would be easier to reply to emails. In the current state there is no way to just hit reply on my mail client. I have to get the email address from the headers, copy, and paste it in to the "To" field of my mail client.

There's nothing to stop you hacking the code to put a different address in the Reply To field - but if you do then your emails will probably all bounce.
Remember that the email sent from your website is from your website not from the user who completed the form. E-mails with mismatching Reply To addresses are - quite rightly - treated as spam.
I agree that it's inconvenient to have to copy and paste the address so why not add a ReplyToUser link in your email, that way you just have to click the link.
