Question 1: I have just updated Joomla to 3.4.8. In my Extension Manager it is showing there is an update to Chronoforms 5.0.10. Just want to make sure this is compatible because my chronoforms are a very import part of how my organization runs and I don't want to break anything.
Question 2: My web host has been encouraging me to use Cloudflare. I am concerned that with caching issues my forms won't work, so I am hesitant to do that. Any experience in how the forms work in the cloud?

If you are already using CFv5 then upgrading to the latest release is fine - you should go ahead and do that.
I have little experience with services like CloudFlare; I think you are probably right about potential caching problems but I suspect that those would only affect some of the Captchas, if you use Google ReCaptcha or a classic HoneyPot (not the CF one) then you will probably be OK.

Okay, I have done the upgrade and it looks good.
One more question. I am considering moving my site to a new host because I am not happy with the customer service where I have it located now. I plan to port the site over to the new server using Akeeba backup. Will I need to rebuild all of my forms, or will Akeeba include the Chronoforms? Last time I move my site I was doing a major upgrade so I did need to rebuild them. But since I will not be changing Joomla or Chronoforms versions is it necessary?

All of the forms and form data is held in the database so when Akeeba copies that over it should all be available in the new site. For security it would do no harm to take a form backup from the Forms Manager icon too.
