Si there a way that I can change the e-mail setup so that the recipient's address changes depending on the subject of the e-mail (the subject options are defined by a dropdown selection)?

Yes you can, please see FAQ #31 which shows you how to set a Dynamic To email from a drop-down. You'll need to adapt it a little.
