Is there a way to follow send emails and to view/record which recipient opened the mail ?
in other words to have some statistics of who received and who opened or rode the email.

Do you mean for ChronoMails or ChronoForms emails ?
Usually this involves some small image added to the email content which updates your server when the email is opened
