I've added field names to the Data listing Field(s) field in a CC, and the fields show up in the listing, but changes are not saved.
Is there an example of how to make this work?
The user wants to be able to edit certain fields similar to doing it in a spreadsheet (sans formulas) where they can make quick changes to many rows, without having to load a form to edit the record.

I don't think that you can easily do this in CCv4 without a lot of custom work. I believe that Max has added this to CFv5 though - see this FAQ - so it might be worth trying that instead?

I ended up figuring it out. It took about 20 lines of JavaScript and about 40 lines of PHP in a new event on the related form. I now have code that I can put on any CC list that will save any fields. The only change is the table name and key column name.
I'd love to try CC/CFv5, but this site has over 300 forms and 100 lists. Way too much to convert, plus I use a few features that don't seem to be in v5.
